Toss 2 cups of lettuce, 1 grated carrot and 1/2 raw papaya together. Mix 1 tablespoon of balsamic vinegar and 1 tablespoon of extra virgin olive oil, fresh lemon juice and drizzle over the top. Saute 1/2 cup of yellow moong dal, 1 cup of your favourite veggies, small pieces of ginger and two cloves of garlic in someextra virgin olive oil. Slow cook till the dal and veggies are done, garnish with coriander or parsley.
